MEG's BREAD SALAD
INGREDIENTS:
Serves: 6
- Loaf of rustic bread
- Cherry tomatoes
- Ciliegine mozzarella
- Fresh basil
- Pitted Kalamata olives
- English cucumber
- Roasted chicken
- Olive oil
- White balsamic vinegar
- Dijon mustard
- Shallots
- Salt
- Pepper
METHOD:
- Slice tomatoes, mozzarella, cucumber, olives into bite size pieces and combine in large bowl.
- Pick basil leaves and tear into bowl
- Add pieces of bite sized chicken
- Add vinaigrette and toss
- 2 parts olive oil to 1 part white balsamic vinegar, 2 tsp dijon mustard, 1 tsp of shallots and mix
- Add bread cubes last and toss
