At Home In The Kitchen: Bounty Kitchen's Bread Salad

MEG's BREAD SALAD

INGREDIENTS:
Serves: 6

  • Loaf of rustic bread
  • Cherry tomatoes
  • Ciliegine mozzarella
  • Fresh basil
  • Pitted Kalamata olives
  • English cucumber
  • Roasted chicken
  • Olive oil
  • White balsamic vinegar
  • Dijon mustard
  • Shallots
  • Salt
  • Pepper


METHOD:

  1. Slice tomatoes, mozzarella, cucumber, olives into bite size pieces and combine in large bowl.
  2. Pick basil leaves and tear into bowl
  3. Add pieces of bite sized chicken
  4. Add vinaigrette and toss
  5. 2 parts olive oil to 1 part white balsamic vinegar, 2 tsp dijon mustard, 1 tsp of shallots and mix
  6. Add bread cubes last and toss
