February 2020 Chicken Adobo!

INGREDIENTS

  • 12-20 skinless thighs

  • 3/4 cp Vinegar (white or apple cider)

  • 1/2 cp soy sauce

  • Paprika light dusting over both sides of meat (optional)

  • Fresh ground pepper

  • 1 pinch Red pepper flakes  (optional)

  • 2-3 Bay Leaves

  • 5 Garlic (1 clove per 2pc. Chicken)

  • 1 large Shallot


METHOD

  1. Make Rice

  2. Season chicken with pepper & paprika, sear in olive oil

  3. Remove chicken & saute chopped garlic and shallot

  4. Add ¾ cp vinegar(white or apple cider) & ½  cp soy sauce, and bay leaves

  5. Simmer 35-40 minutes

  6. To thicken whisk 1 tbsp corn starch to ⅛ cp water

  7. Serve in a bowl over rice

  8. Finish with Fresh chopped Parsley
