5 minutes cook time; 10 minutes of prep time
Special equipment - Cast iron griddle or cast iron pan
Ingredients
4 burger buns
1lb ground beef (80/20), divided into four equal pucks/balls (about the size of a golfball) Check out Sweetgrass Farms Beef from Lopez Island
Lettuce (shred if iceberg, if loose leaf, use tender tops of leaves, avoiding the stems)
4 slices of cheese (preferably American)
Butter (for buns)
Salt and Pepper
Burger Sauce
1/2 cup Mayonnaise
1Tbsp Ketchup
1tsp Mustard
1Tbsp Dill Relish
Chopped onions (optional)
1/4 cup Sour cream
1 Tbsp Pickle juice
Method
1. Preheat griddle over medium high heat for several minutes
2. Melt butter (or room temp)
3. Brush/spread softened butter on buns
4. Either place in oven to toast or griddle buttered side on heated pan
5. Pull buns off when lightly toasted and golden brown
6. Place dollop of burger sauce on bottom bun
7. Add any optional ingredients on bottom bun
8. Add lettuce on top bun
9. Place burger balls on griddle.
10. Season with pinch of salt and pepper
11. Smash burger with a spatula, use second spatula if needed for leverage
12. Take care not to tear meat
13. Cook until most of the red has gone away, about 90 seconds to two minutes
14. Flip burger patty and season with pinch of salt and pepper
15. Add slice of American cheese
16. Once cheese has melted remove from griddle and place onto prepared bottom bun
17. Finish burger assembly
