INGREDIENTS
Bucatini pasta
Guanciale (cured pork jowl) or Pancetta
Red onion
San Marzano or Mutti tomatoes
Red pepper flakes or ground Calabrian chili
Pecorino cheese
Extra virgin olive oil
METHOD
1. Get the Salted boiling water ready and add the bucatini
2. Slice the onion and Guanciale into lardons or strips
3. Render the guanciale and let the onions become soft
4. Add the red pepper flake, put in the tomatoes, cook the sauce for as little or as long as you want
5. Cook the bucatini super al dente, add the bucatini to the sauce with a few ladles full of the starchy salty pasta water and finish the pasta in the sauce
6. Plate the pasta add the pecorino cheese
